Chocolate Nut Energy Bars

Ingredients
- 5 Tbsp. Milk or Almond milk
- 1 Egg
- 10 oz. or 1 loaf German-style rye bread
- 4oz. Pitted Prunes
- 2 SkinnyMe chocolate squares, chopped
- 3 SkinnyMe chocolate squares
- ½ Tsp. Stevia
- ½ cup Chopped Almonds
- ½ cup Pumpkin Seeds
Directions
Preheat oven to 350 degrees.
Grease an 8in. loaf pan, you can use sunflower oil or cooking spray.
In a large bowl whisk the milk and egg together. Add the bread into the mixture. Let bread sit for a minimum of 10 minutes or until the liquid mixture is soaked into the bread.
Add the prunes, chopped chocolate, almonds, stevia and pumpkin seeds to the mixture.
In a double boiler temper the remaining chocolate, do not overcook.
Add melted chocolate to the liquid mixture and stir together. Transfer mixture to the loaf pan and smooth out top with straight edged spatula.
Bake for 20 minutes. Make sure you check with a toothpick to see if it is cooked all the way through. Let cool, then cut into slices. Store in the refrigerator.
