Chocolate Carrot Breakfast Bread

Ingredients
- 1 ½ cup Walnuts chopped
- 1 ¾ cup Shredded carrots
- 1 ¼ cup Whole wheat flour
- 2 tsp ground cinnamon
- ½ tsp nutmeg
- ¼ tsp cloves
- 2 tsp baking powder
- ½ tsp baking soda
- ½ cup Sunflower oil
- 1 cup Rice milk
- 2 eggs beaten
- 2 Tbsp stevia
- 1 Tbsp fresh orange juice
- 5 SkinnyMe chocolate squares (tempered)
- ½ cup Raisins (optional)
Directions
Preheat oven 350 degrees.
Spray cooking oil on an 8 ¾ X 4 ½ X 3 inch loaf pan.
Chop walnuts to a fine chop. Add to a large bowl with carrots, flour, cinnamon, nutmeg, cloves, baking soda and baking powder. Mix well so carrots are coated with flour mixture.
In a separate bowl mix oil, rice milk, eggs, stevia and orange juice.
Slowly mix the liquid mixture into the tempered chocolate.
Add raisins into the chocolate mixture followed by the flour mixture. Mix well. Pour into the loaf pan, smooth the top so that it is even.
Bake 50-60 minutes.
Make sure tooth pick comes out clean.
Once the bread is cool, remove from pan.
Slice and enjoy!!
